Caramelized on the stovetop gives great color and flavor. Enjoy life, play with your food a little.
I can't just throttle my crockpot with a thermostat? I have sealer bags and a slightly industrial vacuum pump?(35 bar?). You can, and you'll get something close. I think one of the main problems is the lack of a pump giving you temperature continuity.
