I can't just throttle my crockpot with a thermostat? I have sealer bags and a slightly industrial vacuum pump?(35 bar?). It's the geezer way - cobble together 3 products that could be replaced by one modern one, just to prove we can.

You can, and you'll get something close. I think one of the main problems is the lack of a pump giving you temperature continuity. IIRC, that's what @gee did though.
