And the fumes from the sealer are getting me high.

Can you put hot pots and pans right on slate? Also, doesn't slate show scrathes and such?

Slate is a matte finish

You can put hot pots/pans on slate, it doesn't need to be sealed, and the green does not show scratches but on the grey they can be quickly polished out.

The house is in the slate capital of the world, and it's not a common countertop so it looks pretty good.
