ATK had a "sous-vide" show.

Poached eggs: Cold eggs straight from the fridge, 167F for 12 minutes. Pop them in a cold water bath afterwards to shock them.

Boy I'll tell ya. I've cooked a lot bacon in my time and the Kunzler fights back harder than any of them. Need burn proof gloves up to your armpits.

A couple months ago, I was in Champaign, IL at a little swedish restaurant & got an omelet that was cooked exactly like custard. Perfectly yellow, silky smooth. It was ridiculously good.

Yeah, I've obviously done that too. These are better imo, and for eating immediately.
