J Kenji from Serious Eats did the 165x12 suggestion that i use - it's on the Anova App.

Interested to see how 36 hours turns out.

Also - pro tip - weigh your bags down with something - i find ribs tend to float.
 
Insects are off limits, including honey for strictly vegan vegans. Bacteria has no self awareness. Yeast is OK to slaughter freely, as well.
Edit, of course pests like roaches and mosquitoes can be killed, but better to try to keep all the creatures out.
Killing pests as you call them is totally hypocritical. Vegans wouldn't eat a lobster, but they'll kill a bug and not use it's body in any way?

Final verdict, too mushy.

The bones on the end bacame little bone bits. PITA.

Next time I'll try the 165x12.

Also, I think I needed more salt to increase the moistness. I tend to under salt.

And needed buttload more rub versus throwing them in the smoker.

Finally, smoked ribs hold forever on a hot plate in a foiled and cover pan. Not with these.
