Nothing bland about not attacking your tastebuds with a load of shit. It's the subtleties in food that make it gastronomique, not piling shit loads of everything you possibly can on top of each other. A potato is a potato, it has it's own unique and wonderful taste, why not let it taste like a potato?

people have been piling stuff on potatoes for years. cheese on gratins, ketchup or mayo on fries, sauces on gnocchi...this isn't a new thing.
And yet for many, many years they've left potatoes alone as well. I guess some of the finest chefs in the world know jack about taste though seeing as they're happy to not pile shit on their potatoes. Weird.
