I screwed a pig

Re: I screwed up big

Don't worry about it.

That gear simply wears out - the teeth wear thin with use, weaken, and eventually they break. I've got a fairly old KitchenAid that sees almost daily use (I bake my own bread) and I go through one every 4-5 years. I keep a spare one in the cupboard, and it's a pretty simple procedure to replace the gear.
Care to share any bread recipes?

A bunch of us here make bread. I'm actually going to make cinnamon roll dough later tonight.

as ridiculously simple as this is, its delicious zero effort bread

Only requirement being that you do have to have a bigass dutch oven, its an absolute requirement. But any decent cook has oven ready stuff like that already anyway

I have a big ass cast iron lecreuset dutch oven. Americas test kitchen has an awesome no knead that's very similar.

I prefer loaf breads though, I make a killer honey 5-grain. I use that Bob's red mill cereal mix in it. Tastes awesome and makes amazing french toast.

My everyday bread:

heat up 1/2 cup milk, add a tbsp active dry yeast and a tsp sugar, set aside until it's proofed
meanwhile whisk 4.5 cups flour (I use 50/50 white all-purpose and white bread flour), 1.5 tsp salt, 2tb sugar
melt 1/4c melted butter
heat up a bottle of beer (350ml) in the microwave to around the same temp as the yeast.

dump everything in the kitchenaid, add flour as needed (4.5 cups comes up short, you'll need a bit more), knead to a good bread texture and dump in a greased bowl until it doubles. Punch down and knead again, I do the second knead by hand. Quarter the dough, grease a couple bread pans, dump two dough balls in each pan. Throw a wet cloth over it, let it get about half bigger, slash the top and bake at 350F.

It's goood. It's like a regular white bread but with a ton more flavor, incredible just by itself lightly toasted with a bit of real butter. And different beer give it different flavors - a local brewery makes a jalapeno beer which is pretty gross to drink, but it makes awesome bread especially with chunks of cheddar thrown in.

Re: I screwed up big

And on a completely different food note, I just made turkey flips. Diced up leftover turkey, salt beef, potatoes, carrots, stuffing and a dab of gravy baked in a pastry. Sort of like a thanksgiving dinner pizza pop. Came out freakin' awesome.

Sounds tasty. I have some Sam Adams Oktoberfest on hand, will have to give it a shot. Thanks!

I always use real butter, haven't eaten margarine in years. Butter FTW.

Re: I screwed up big

People still actually use margarine?
Almost everyone I know. I'm the odd one out who makes stuff from scratch. They love the stuff I bring in but all look at me funny when I talk about anything specific. I feel like people take a step back when I tell them I'm doing upholstery now also.

Re: I screwed up big

What you actually need to do is upgrade that mixer to one that can handle the stress of what you need it to do. We used to have the artisan model and then I upgraded to the professional model. It's bigger and has more power. IBWIP loves me for it. Want more amazing blow jobs? Do this.

It's the Pro 500 model. What I need is a dedicated grinder. Running 2-4 deer a year through a kitchenaid grinding attachment isn't good for it.
