That bacon looks delicious. I'm trying to get my dad to do some in his big green egg. He's all about smoking brisket and turkeys and stuff, no clue why he is resisting the bacon.

well, you gotta cure it first to get that real bacon-y flavour. That scares a lot of people off...finding curing salt is pretty easy, but it's important to do it right. The curing process takes about a week, massaging it every day, then another day for drying, then a few hours of smoking. It's not necessarily cheaper than buying bacon, but there's really not anything I can think of that makes you feel more manly than making your own bacon.

Plus if you do it yourself it doesn't have to be all full of chemical death.
 
I cut the rind off my bacon before smoking it, half the reason mine is so ugly. I notice you've left yours on, what's the rind like to eat?

I cut it off after smoking, and add it to soups or stews to get a nice smoky flavour in it, I don't actually eat it.

Leaving it on helps the texture while it's smoking - you get less marks from the rack
