Some people like to get overly technical with recipes. I don't. All quantities are simply estimations. You can be a good bit off with any of them and still end up with good food. Cups and spoons are just for people who get nervous using handfuls and pinches.

I like about every fruit there is, except the mango. Don't know what it is about them. Don't hate them, but I wouldn't voluntarily eat one if there were other options.

This is a constant argument among friends, but I agree with you. Recipes are guidelines.

As for fruits, I dislike them cooked unless it is a citrus flavor. Not sure why either, but I am just not a fan of baking/cooking it. So I love bananas, but hate banana bread. Love apples but not apple pie... etc.
 
Banana Bread.

Makes one 9x5 standard bread pan loaf, or an 8x8 short loaf.

That's be roughly 22cm x 12cm tall or 20cm x 20cm short for you, @MacG.

Dry ingredients:

1-3/4 to 2 cups all purpose flour

1 cup (packed) dark brown sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

----------------------

Wet ingredients:

1 stick butter

1/4 cup sour cream

1 teaspoon vanilla extract

2 eggs

4 very ripe bananas mashed up

----------------------

Mix dry and wet ingredients separately, then mix together well.

Bake in 350 preheated oven (about 175-180C for you, Mac), for about 1hr & 15min. Maybe just 1 hour for the short pan. Or until top has good cracks in it and knife in the middle comes out clean.

Optional:

1/2 to 1 cup chopped walnuts, pecans, cranberries, or whatever you like. Recipes aren't supposed to be set in stone.

Baking tip:. Give the pan a light greasing of butter, then dust with flour and tap out the excess. Makes it easy to get the bread out the pan later.

Vegan substitutions:

You could leave the sour cream out. Maybe throw in an extra banana for moisture and/or some orange zest for a little zing.

I have no idea what to substitute for butter and eggs but seeing as they're in almost every baking recipe there is, there must be some common substitution. Recipe makes a pretty moist, little bit heavy bread, not light and dry by any stretch. Keep that in mind when making substitutions.
I can veganize just about anything except steak, so don't worry about subbing ingredients in your recipes. But thanks, it's nice of you :)

Bananas are fucking delicious. I'm just allergic to them. It's actually an allergy to a whole list of foods and to latex. It's just much easier to avoid avocado and kiwi fruit as most people aren't just walking around snacking on them. http://latexallergyresources.org/cross-reactive-food

However, I've never had a terrible reaction to a potato or a tomato. I just don't eat a ton of that.
 
How did you turn this into a vegan/vegetarian thread yet again? Just pointing out that you dislike the dickish way some people are to vegans, yet you are being similar by coming in to lecture us on how bad we are for the environment, to other animals etc. Part of the reason why you see people being dickish towards vegans comes from how dickish and condescending/lecturing vegans/vegetarians are towards non-vegans.

Be vegan, fine, but like Paleo people, gluten free nut jobs, etc I don't want to hear how it is so much better than what I eat. What I eat works for me and I feel and am perfectly healthy with all I eat as long as I avoid onions & those in the allium family. I don't need a lecture about any of what you just did.

You are a smart and funny person, but I admit this gets old.

Yellow mango is totally superior to the bigger redder apple mango.
Cut it in two filets. Scoop the meat out with a spoon.
You can suck the juice out of the pit.
You are close to Mexico, so mostly have access to apple mango.

Go yellow.
You will thank me.
 
Well, I think choosing not to eat stuff and spending a lifetime thinking about food is different from having food allergies or having food that worsens medical conditions.

Also, note, I didn't include vegetarians in my rant. Although I bet you do eat a ton of soy which probably isn't the best idea. Regardless, you didn't save any animals. They would have died anyway. The animals being produced to feed people are being produced and killed regardless of your dietary habits. If you have made a significant enough impact on the food industry by your choice it would only be in that they stopped making as many baby animals or they kill more baby animals at birth.

Like, @Ledboots has her reasons & her beliefs about her diet. I'm not gonna shit all over that . We will have disagreements about slaughtering & meat in general , but I can't imagine why putting her down like this is totally necessary ? :oops:

Hey Aussie get with the times. I ranted about it due to a few posts (not just the one I quoted) and we're done - no need to bring it up just cuz you finally woke up. Though seriously, I really do respect @Ledboots a lot but I probably get tired of hearing about certain food lifestyles, thanks to an annoying sister and good friend, quicker than most.
 
My chocolate chip banana bread recipe. This is a very moist, decadent, falls-apart-really-easy style of banana bread, good for dessert. Make sure to pour up a glass of milk to have with it.

ingredients (wet):
- 4-6 borderline-rotten bananas. 6 if they're normal sized, 4 if they're huge.
- 1 cup melted butter.
- 4 large eggs
- 2/3 cups milk
- 2 tsp vanilla extract
- 1 overfilled shot glass of dark rum.

ingredients (dry):
4 cups flour
1.5 cups sugar
2 teaspoons baking soda
1 teaspoon salt
2 cups chocolate chips

Directions:
- preheat oven to 325
- grease a two 4x8 loaf pans
- whisk together dry ingredients in a large bowl
- grab a medium mixing bowl. Give half the bananas a good smash with a potato masher, chop up the other half and throw them in. Then mix in the rest of the wet ingredients.
- dump the wet on top of the dry, stir together with a spatula until just combined. Pretend you're making muffins, not cake, don't mix the fuck out of it.
- Bake for 30-40 minutes until center measures 195F with an instant read thermometer.
