Makes sense. So possibly add more dry pectin on top of the already added liquid pectin? Or just scrap and start over with dry?

What's your favorite all time cheese?

I couldn't simply say one. I love stichelton ( yes stichelton not stilton), yarg, roncal, feta, brie of course, tomme de savoie. If I could only ever eat one it would be either stichelton or the savoie.

I love balsamic! It goes on almost everything I make.

Honey is RIDICULOUS on blue cheeses. The sweet with the bitterness... wooweee. OH OH OH you may like this. I usually get green apples, slice thin long ways, the on top spread a mixture of blue cheese, honey, and dried cranberries. Unf. I may have to make that for xmas.

Mine is gonna be a traditional newfoundland turkey dinner with salt beef. Turkey's thawing now, getting brined tomorrow.
