The fake scallops are usually diced shark. Usually, they are actually scallops, just the larger less tasty ones cut to size, not the bay scallops.

There is good bay scalloping just north of Tampa, in the summer. There used to be a thriving scallop industry here.

I just had to look that up because I thought it was an old wives tale. I couldn't find anything to confirm they are sharks or skates.
