Well done and wow! We've been into onions for a while now and even did onion smash burgers numerous times! No raw reds forever club. Connant can back me up on that one. Guac is the only exception.

Only in very limited applications and VERY light on the amount. White/yellow and VIDALIA,(we're both from GA). Sauteed to hell or raw on a burger.

Vidalias don't have the bite that red onions give. That crisp feeling you get from mustard, wasabi, and raw garlic. I like feeling my head turn inside out.

Depends on the time of year.

Late season reds get a little too strong. Early season reds are :chefs_kiss:

I switch over from reds to sweet vidalias in December for things like pico, guacamole and salads.
