Venison wellington is great. Also a 28 day hung venison steak, sauteed for colour then cooked in the oven and finished off in butter. Wonderful.

I too have never had deer meat mixed with anything else. I've never even seen it that way.

You're nuts. If you know how to prepare/cook venison then it should never taste "gamey". I supposed you don't like the taste of buffalo unless it's made into jerky.

One of the benefits of my father's job at Fort Sill was to be associated with the post fire department. Every year the Wichita Mountains Wildlife Refuge culls the bison heard to keep from over populating the refuge. The post fire department would get two to three animals for slaughter. My father would go in with these gentlemen.

My freshmen year roommate's dad went hunting in Alaska and brought us back a ton of fresh caribou jerky. I still drool when I think of that stuff. It was like God had made it. I've never tasted jerky that good since then. It makes me sad to think I've had the best and may never again have it.
