Venison wellington is great. Also a 28 day hung venison steak, sauteed for colour then cooked in the oven and finished off in butter. Wonderful.
there's a reason deer meat is always mixed 50/50 with beef or beef lard... its just not good stuff unless it's in a sausage or jerky

reigndeer is terrible.
Elk and caribou are some of the best meat I've ever had.
My freshmen year roommate's dad went hunting in Alaska and brought us back a ton of fresh caribou jerky. I still drool when I think of that stuff. It was like God had made it. I've never tasted jerky that good since then. It makes me sad to think I've had the best and may never again have it.
