steaks get injected with a marinade and I cut small slots in the sides and stick in garlic cloves or apple slices coated in honey/ lime juice mix.
It works really nicely if you're grilling a leg of lamb
After seein TONS of filthy lamb ass in Scotland, I'd tend to agree with ya there.
(I usually only see them all cleaned up for state fairs 'round these parts)
