They stick a foil pan under the pork in the smoker to catch some of the fat that melts off, and use it to make a vinegar sauce they call "meat lube". They don't use much of it, but holy fuck, it makes for moist pork.

They then serve it with a few different sauces on the side. I usually go with their sweet+heat.
