The chemicals in it can help make other cheese much more melty, so its also good for that. Yes, you could also buy sodium citrate or calcium citrate or whatever it is. Or you could just keep American cheese on hand.
I have sodium citrate, and I tried a seriouseats / bon appetit / I-can't-fuckin-remember mac and cheese one night.

Too weird for me. It felt like I made my own boxed mac and cheese.

Sodium citrate is a food additive that makes cheese more melty. So if you add a slice of American cheese to cheddar, it will make the cheddar more melty as well.

I had a meeting downtown for some sample food testing with a celebrity chef, anyways he handed me this glass of wine and I haven't had wine since last year and I was like uh uh uh and I took 3 sips and it went to my head cuz I no longer drink.
now im sitting in the boardroom eating crackers til I feel better
