I've made ricotta before, and it just seems like doing it sous vide is not going to be an improvement.

It sounds like it's just like anything else, the improvement is gentle heating from the water bath.

I'd also like to make my own tomato gravy 'sous vide' eventually. Way too often the sugars get burned in the 'let it barely simmer for a couple hrs' part.

There's an Indian place near me (I know @Domon, it sounds racist ) that makes Chili Chicken and it's fucking outstanding.

It's a different kind of heat. Indian 'chili' seasoning is different, and this menu item is ridiculous. small side of saffron rice, shredded salad with what tastes like Italian dressing, and at least a pound of shredded chili chx. That with a little no oil chapati, and I'm good to go.
