A metal will lose heat 8 times more slowly each time you double it's volume (this was a rule of thumb someone taught me once, not sure how accurate it is).

So a very small amount will lose heat very quickly. It spatters as a liquid, hits your arm as a plastic, and by the time you react and start screaming and batting it away it's a solid.
