Bright flavors like fresh parsley, with an acid and a fat. Use sparingly to enhance without overpowering the meat.

i like thyme with pork in a cream sauce with a bit of dijon for thick cut pan seared chops (make sauce while pork is resting)

i like rosemary and garlic with heavy salt and olive oil all pounded into a paste for roasting pork
