Flavored brine. Hopefully tre will be along soon to post the brine he uses, as I wanna try his this year.

iirc, mine has chicken stock, peppercorns, ginger, allspice berries, and some other shit. brine it overnight and you will have the juiciest turkey ever. its on par with deep fried turkey as far as juicy, only it has much more flavor.


edit: Williams Sonoma has a pretty good prepackaged brine as well...

I don't have Thanksgiving plans set yet. It's a tossup between staying home to party with the regulars at my favorite bar and go sailing during the day, or going to a friend's ranch where there will be a huge thanksgiving dinner to attend. I'm leaning towards the former since I won't have to find a dogsitter.

You wont go back after brining. The Food Pimp, aka theac, turned me on to it a few years ago. btw, altons cooking instructions in that recipe is dead on.
