Just use a pressure cooker but don't use it at 15 lbs. Only 5 lbs. Then you are at about same pressure and temperature as sous vide.
Don't beat me!

Buy an Anova, they're pretty common. And you'll want a vacuum sealer as well, a Foodsaver is easy to find.

The Anova app has a ton of good recipes on it.

Call up Williams Sonoma stores in your area, they might have one in stock. Can't find any other Anova retailers in Canada.

As another option Best Buy has this thing, which is made by Instant Pot, might be half decent:
