Food So Has Anyone Brewed Beer Before?

No, of course not.
It's super easy to put together a coolship on a homebrew scale. Try it! But my understanding is that you'll either end up with something good that you'll never be able to recreate, or something disgusting that you'll throw out (and a tendency for the latter). Seems like a lot of work to end up dumping. But maybe it's all FUD. No idea...

edit: And if it's terrible, you'll essentially have to throw out the coolship and every tool that touched it.

Could be fun for a small batch. Like 2 gallons or something.

You could. And it might be fine. But lacto and especially brett are really fucking hardy.

Fun story: Most large breweries have separate facilities for regular and sour beers, and rules for how much time has to pass for an employee to visit both facilities for just this reason. Well, Jester King in Austin accidentally got a brett infection in their equipment at the main brewery operation. When they couldn't get rid of it, they made a name for themselves by souring all their beers.

Also, there's a HUGE brewery in CA called Russian River (they make Pliny the Elder/Younger). They got a brett infection and had to tap (iirc) the Sam Adams folks to brew their beer while they shut down operations for months to get rid of it.

Oh, those are fine enough to stop something about 1/15th the size of a brett yeast spore. * Peeps growing mushrooms use these, yeast and molds frequently attack fungi. **Spraying with hydrogen peroxide before using is a good back-up, HO destroys most yeasts quite effectively and quickly.
