I believe the photo is of chicken kidneys with a mustard sauce. No indication on what kind of mustard it is.

But when it comes to offal I'm more of a pan fried chicken liver spread on toast kind of guy. Sauteed chicken hearts are good too-- they have an interesting texture. One day I will learn how to prepare beef liver, much to Eileen's dismay I imagine.
