I’ve been converted from cheap ketchup (catsup?) and started buying this stuff. Not nearly as sweet and way more tomatoey than inexpensive brands. It’s awesome stuff, and it’s weird being so taken by something so simple as ketchup.

I've done wet cured MSM, pastrami style, I'm gonna have to try out this dry cure method and see how it compares. Wish brisket wasn't fucking $8/lb.

We are going to some friends tonight and having vegan poutine. I'm dedicating th is dairy free meal to you cold northerners @tre @gee @Maureen
What do you use for curds? Resto Banquise (the 'poutine institute' in Montreal) serves a vegan one, so it's permitted :)

Also, make your fries right. Russet potatoes, cut them, soak them in water with about a cup of white vinegar per gallon of water for at least a couple hours. Par-fry, let them cool and re-fry to finish.

Oh I'm not making them so I haven't a clue :lol: They're a Canadian couple so I think I'll be in good hands but will report back.
