Finally got around to attempting this. It seems it's not really possible for me to keep it around 230f. It's getting way hotter. The door leaks smoke, could that be the issue?

If this this thing is made like a stove/ oven there'll be an adjustment screw, probably inside the shaft the knob is on, to adjust low/high in the knob travel. You "low" setting on the knob might not be low enough.

If that doesnt work, check the nozzle at the burner. Somebody maybe drilled out or put in a bigger one to get more flame.
Also propane and natural gas use different size nozzles. IIRC propane is smaller, meaning if it's setup for natural gas it'll make big fire with propane.

And as was mentioned, I didn't mean the main feed knob, sometimes theres an adjustment on the actual jet.

Knowing them this is probably some fancy smart device thing but there still has to be a mechanical adjustment for gas flow somewhere.

And yes use the water pan for low and slow smoking.
