If you feel like investing a bit more money in the hobby, Maverick and Thermoworks sell 'proper' smoker thermometers which have dual probes for meat/smoker and a remote display.
I have a Maverick and it's pretty awesome.

I've made this stuff twice now for 'meat club' at work, and it's fuckin' amazing. The corned beef recipe calls for brisket but I've just used cheap blade roast/outside round roast/etc and it works just fine, but brisket might be more available in your neck of the woods.
