Good recipe: Potato and goats cheese bread

Made this yesterday, it's absolutely gorgeous.

You need:

1 x 4oz (110g) round goats cheese
4 spring onions/chives, finely sliced
1 medium red potato
1 rounded teaspoon of chopped thyme (or any other herb you like)
6oz (175g) self raiding flour
1 level teaspoon of salt
1/2 level teaspoon of cayenne pepper (or chilli etc)
1 large egg
2 tablespoons milk
1 heaped teaspoon of grain mustard.

1) Take any rind off the cheese and cut it into 1/2inch cubes. Sift the flour, salt and cayenne pepper into a mixing bowl.
2) Peel the potato with a potato peeler, grate the potato into the bowl.
3) Add the spring onions, chopped thyme and 2/3 of the cheese. Now blend it all together with a palette knife.
4) Beat the egg together with the milk and mustard, pour the mixture into the bowl making it into a rough dough using the palette knife.
5) Put it all on a baking sheet and make it into a roughly 6inch round dough. Press the rest of the cheese lightly over the surface, dust with flour and scatter the thyme on it.
6) Bake the bread on the middle shelf of the oven for 45-50minutes or until golden brown. Serve slightly warm.

Bread is good. Bread and cheese is better. I've had potato bread before and it was good. I will try this recipe. I am lying, I will not try this recipe. I cannot cook without lighting something on fire and/or creating a gigantic mess. I really would try it if I could cook though, because it does sound pretty good.

But I haven't eaten lunch yet, so everything sounds good to me right now.
