Mmhmm, I don't remember last years. I was drunk, but still.

Yes, you were drunk. I recall it was a good time until a certain "friend" crashed the party with his harem members who sulked and ate our food :p Oh, and the other friend who blamed it on the al-al-al-al-a-al-cohol that she was hitting on one of our good friends the entire time even though she has a boyfriend who she's been dating anywhere from 2-7 years (depending on who's asking) that is going to eventually pony up for a ring for her.

1) Any finger food that's messy. Hot wings, nachos, chips with various dips, fried pita chips with spinach artichoke dip, cheese logs/wheels and crackers, ribs, hot dogs and hamburgers, etc.

2) Bacon-wrapped filet mignon with a peppercorn bourbon butter sauce drizzled over the top cooked to a medium rare perfection.

3) Pie or cake with ice cream on the side. It almost doesn't matter which pastry or frozen concoction, just keep that formula one of each.

4) Carrot cheesecake slice that measured 6" high with a caramel peanut sauce drizzled on top.

5) Not being from Texas, I can only observe the kolache phenomenon and would recommend that. But please do not do what the bakeries here do and put a sweet and savory jam or marmalade into a hot dog bun and pass that off as kolache.

how is chosing classic tailgating foods and bumping them up one level to be indoor friendlier and tastier gaying it up?

Gaying it up would be making it strip football with only men and every cute commercial an article of clothing comes off and instead of food is a martini bar.

Main snacky things: summer sausage, hot wings (if I can convince the taller half that they're not a pain in the ass to make), spinach artichoke dip (omg :drool: )
Wish list things: skirt steak(sorry DB, filet for 25 is a bit out of our reach), pizza (which may be too time-consuming to make ours for 25 people)
Favorite dessert: Ape's response of "anything with sugar in it". winnar!
Orgasmic dessert: I still maintain that key lime pie will be the best thing I ever put in my mouth, but cheesecake sounds pretty awesome too
Dallas dessert: Kolaches? Are they really sweet enough to be considered "dessert" by Ape and my standards? And that dulce the leche cake looks aMAZing.

Technically kolaches are not a dessert but instead a savory dish that can be adapted to be a sweet dish.

My parent's untraditional kolaches were actually a pinch of dough "hugging" some marmalade, baked, then sprinkled with powdered sugar.

Hot wings are quite easy. Deep fry, while still hot toss in a large bowl with sauce, then plate. You can even bake them if you would rather. Use a combo of sauces you like, for instance HP Spicy sauce + Sarachi + Worchestershire + Soy + Chipotle Tabasco + a shot or three of bourbon.
 
You can make the dough ahead of time for the pizza and assemble the pizza, ready to throw in a mega hot oven. 15 mins later you ahve homemade pizza.

Or you could do Bobali or dejourno (whatever) it is
 
You can't have a super bowl party without a super bowl sub!

Get large hoagie rolls or even a large round loaf of artisan bread (crispy outside, soft inside, shaped lke a soup bread bowl) and slice on the parallel, stuff as you see fit. Adorn sub with little Dallas flags using toothpicks, cut vertically to make slices, done.

When you are making your stations of snacks (areas of the room(s) with a bowl of chips and dips), leave the bags of chips or prezels closed but inside the bowl until the guests arrive. they will be fresher that way. Open them up and pour them when people start coming in.

Also easy access to a large trash cans will aid in keeping the areas clean. If you are going to do a cooler for beverages (I recommend this instead of opening and closing the fridge all the time) keep it at a level that people will see so they don't trip over it or don't see it because it's hiding. I recommend a tub of ice and the beverages instead of a cooler because since a tub has lower sides than a cooler, you can put it on a counter top at arm level and it isn't too high or too low that you trip over it.
 
I would do chips and salsa as well. I would do a homemade salsa that you can make days in advance. Actually the longer it sits marinating, the better the salsa is.
 
Also, because the event revolves around the TV, make sure you have as much viewing area as you can to it. Whether people are standing or sitting, make sure there is visibility to the TV. Locate the food around the room(s) so they do not interfere with the view but also keep key pathways open, like those to the restroom.
 
summer sausage is quite good with a side of various cheeses. I prefer havarti or a nice gouda and a good wheat cracker as a vessel for them. Triscuits work as well but I like the flavor Wheat Thins add to the equation.
 
You can always make "relish trays" as well. An assortment of veggies, maybe with a dip in the middle, would be lovely, too.

So, the Mistah and I always host the Superbowl at our place (or what used to be our respective places). This year is no different and we've got about 20-25 people coming over to party. We've got some of the menu planned, but not all of it (including dessert, I am so stuck on dessert).

So

1. What do you like to eat when watching (american) football? BBQ'd vienna sausages, Swiss cheeze and/or Port Wine cheeze spread with Olive Oil Triscuit crackers, Buffalo Wings
2. What luxurious food would you want to have if you were out tailgating, but couldn't get your hands on it? Most of our tailgates are epic and not missing anything
3. What's your favorite dessert? Sex
4. What the most orgasmic dessert you've ever had? Really really good sex. Or a Dark Forest Chocolate Ice Cream Cake
5. Does Dallas have a famous dessert? (this is more geared towards the Tejas folk).

Oh, I forgot a crock pot on Low with meatballs in BBQ sauce. Make sure to have toothpicks or a slotted spoon next to it.

Oh as for drinks, a variety of beers would be appropriate. We are getting out of the stout season, so if you are going to do a darker beer, stick to light porters or dark lagers. The new hotness now is Black IPAs and I am on the fence with those; they are definitely a hit or miss. You could always go with Sam Adams Lager as the staple, serving small amounts of the macro brews (Bud, Miller) for those with a less distinguished palatte. And you can do a small amount of crazy brews for when chim or I come over to visit. I recommend a good sharp Chech pilsner. Clean and crisp taste that goes with most foods and won't overpower them.
 
For the spinach cheese dip, perhaps do a big soft pretzel and cut into inch long segments for dipping.
 
Deviled eggs are always a winner as well, for those that like them. Use a piping bag with a decorative star tip in it. It makes filling the egg halves easier and looks far more professional. When serving them, put a little out at a time so they stay cold.
