Food So Has Anyone Brewed Beer Before?

I assume Florida is like here where there are no basements and water lines are only a foot below ground. When it's 100+ in the afternoon and doesn't dip below 80 at night you can take a "cold" shower and it's not actually cold.

How does scale form with soft water?
There's minerals in all tap water, softened or not.

Most people don't have an on-demand hot water heater with a 180,000BTU burner inside it, which is what makes descaling a requirement (the water can flash-boil on the heat exchanger and leave its minerals behind).

So, you might not have calcium deposits with softened water, you might get fun things like potassium deposits instead, but it's all scale, and impedes the efficiency of the heat exchanger.

It would be interesting to try and capture some wild yeast.
Everything I've read from the pros says, don't bother. But I agree, it might be a fun experiment. It would suck to have to dump it through cause something undesirable got in there, which is pretty damn likely.
